Dongpo braised meat (Dongpo Rou) is a dish originating from Hangzhou, China, named after the famous poet of this country. Dongpo braised meat has a not too sophisticated way of processing but the flavor is very rich and well suited to eat with rice. Braised meat ingredients :

  • Bacon 1 kg
  • Scallions 40 gr
  • Ginger 40 gr
  • Shaoxing wine 4 tbsp
  • Cooking oil 2 tablespoons
  • 2 tbsp soy sauce
  • 4 tbsp soy sauce
  • Sugar 2 tablespoons
  • Brown sugar 2 tbsp

Step 1:

Put a pot of water in the stove to boil, add a piece of bacon about 1kg into the pot. Add 10gr green onion, 10gr sliced ​​ginger, 1 tbsp of Thiem Hung wine and pork, boil the meat for about 2 minutes then remove, wash with clean water.

Note: Bacon should only choose the parts of meat that have 1 layer of fat and 1 layer of alternating meat so that the braised meat has the best appearance.

Step 2:

Cut the block of pork into equal squares. Use a food band to tie a piece of meat into a cross.

Step 3:

Prepare a bowl to braise meat. Add in 2 tablespoons of cooking oil, after the oil is hot, add 30gr of chopped green onion and 30gr of sliced ​​ginger, quickly stir-fry the onions and ginger to smell good. Next, put the pieces of bacon in, making sure to change the skin surface to the bottom of the pot. Pour 400ml of filtered water, season with 4 tbsp of soy sauce, 3 tbsp of Shaoxing wine, 2 tbsp of soy sauce, 2 tbsp of rock sugar, 2 tbsp of brown sugar into pot, stir well to combine.

Step 4:

Turn on high heat to the boil, change skin surface up. Lower heat and cover, simmer 1 hour 30 minutes. After being stored for a long time, you will see the glue of the gravy, the meat becomes red beautiful and the flavor is very fragrant.
