Mac and Cheese ( Shrimp cheese macaroni )

Macaroni and cheese (aka call Mac and Cheese) is a dish from England. A simple dish with a layer of greasy cheese sauce wrapped around each boiled macaroni seed to eat still lumpy. With traditional cheddar cheese sauce, you can add any type of vegetable or meat you like, or even combine a variety of cheeses to create rich Mac and cheese flavors.

Ingredients for Mac and Cheese:

  • Macaroni 80 gr (Macaron – Small macaroni )
  • Fresh shrimp 200 gr
  • Broccoli 50 gr
  • Olive oil 30 ml
  • Salt 2 teaspoons
  • Pepper 2 teaspoons
  1. Traditional cheese sauce:
    • Fresh milk without sugar 300 ml
    • 100 gr cheese (Cheddar cheese)
    • 1 tbsp unsalted butter
    • 1 tbsp flour
  2. Italian Breadcrumbs:
    • 1 cup breadcrumb
    • parsley dry 1/2 tsp
    • Oregano dry 1/4 tsp
    • Dried basil 1/4 teaspoon
    • Salt 1/4 teaspoon
    • Pepper 1/4 tsp
    • 1/4 teaspoon garlic powder

Step 1:

Put all of the Breadcrumb ingredients in a dry food mill and blend them to combine well and finely. Put the mixture in a pan with 15ml of olive oil, roast and let cool.

Step 2:

Peeled shrimp, washed, seasoned with a pinch of salt, pepper, olive oil and then sautéed with a little olive oil until the shrimp is cooked and almost faces.

Step 3:

Boil 1 liter of water, add 1 pinch of salt and 80gr macaroni to boil. When the macaroni is almost cooked, add 50gr of broccoli to the end. When the macaroni has just cooked , turn off the stove, empty the basket and drain.

Step 4:

Melt 1 tbs of unsalted butter and add 1 tbs of flour to the stir-fry until it becomes wet. Add 300ml of fresh milk and stir well, the mixture will slowly thicken.

Step 5:

Cook until the mixture adheres to a thin layer in the spoon, add 100gr of grated Cheddar cheese to stir until dissolved. Season with salt and pepper to taste.

Note: If the mixture is too sticky, add a little fresh milk to make it easier to mix with the macaroni in the next step.

Step 6:

Put macaroni, broccoli and shrimp into the cheese mixture, mix well to coat the cheese sauce evenly on each macaroni. Set aside, sprinkle some breadcrumbs already prepared and some cilantro can enjoy.

The dish I made today is the traditional Cheddar cheese sauce, in addition a little shrimp and broccoli to enhance the feeling of “crunchy”. Fragrant crispy breadcrumb is also a highlight for the dish. However, you can completely skip this breadcrumb.
